Old Bones is the ultra-aged line bottled by Backbone Bourbon Company, and the 15 Year is one of the oldest bourbons in its range. The whiskey inside was distilled at Jim Beam in Kentucky on a classic Beam-style mash bill of roughly 78% corn, 13% rye and 8.5–9% malted barley, then left in new charred American oak for fifteen years, an age statement that has become genuinely rare on bourbon shelves as distilleries pull stock younger. It's bottled at about 107 proof (53.5% ABV), close to barrel strength, so the long time in wood comes through with weight rather than being diluted away. Whisky Advocate's review of the first batch found orange peel, butterscotch, flan and honey-roasted peanuts on the nose, a tart, bright palate of orange marmalade and lemon peel with loads of nuts and spice, and a mouthwatering finish of tingling spice and rich oak. That brightness is the surprise at this age: fifteen years of oak shows up as structure and spice rather than overwhelming tannin. Pour it neat and give it a few minutes in the glass.
