It combines Clairin Sajous from Saint-Michel-de-l'Attalaye, Clairin Casimir from Barradères, Clairin Vaval from Fritz Vaval's Arawaks distillery in Cavaillon, and Clairin Le Rocher from Bethel Romelus in Pignon, each made from cane grown without pesticides or artificial fertilizer, wild-fermented and distilled over open fire. Unlike the single-village bottlings, which come out at still strength in the high 40s and 50s, Communal is brought down to 43% ABV, which is the point: it is the approachable one, the clairin for daiquiris, ti' punch and beer chasers as much as for sipping.
