Seagrass, launched in 2021, is Barrell Craft Spirits' rye finished three ways — in Martinique rhum agricole casks, Madeira barrels, and apricot brandy barrels — and it became one of the Louisville blender's most beloved releases. The Gray Label tier reserves older, rarer stock: here, rye whiskey aged 16 years, given the same triple finish and bottled at cask strength with the age on the label. Sixteen years does what the standard Seagrass can't — the rye's spice has mellowed into leather, cedar, and dried herb, and the finishing casks read as accents on a mature whiskey rather than the main event. Expect a nose of dried apricot, honeyed Madeira nuttiness, grassy cane from the agricole, and rye's mint and pepper softened by age, opening into a dense, layered palate of stone fruit, toffee, orange peel, baking spice, and old oak, finishing very long with the apricot and cane lingering. Honest note: Gray Label bottles carry a price to match the age — and Bourbon Culture, no pushover, calls Gold Label Seagrass the best Seagrass money can buy, with Gray a step below at a fraction of the cost. For the drinker who fell for Seagrass and wants to taste it grown up, this is the bottle. A collector's rye.
